1 cup (original recipe) to 1 1/3 cup canned solid-pack pumpkin (from a 15 ounce can, not pumpkin pie filling) OR make your own pumpkin puree!
1/3 cup coconut oil
2 large eggs
1 1/4 cups plus 1 tablespoon pure cane sugar
1 teaspoon cinnamon
Cream Cheese Frosting:
4 oz unsalted butter
4 oz cream cheese
2 cups powdered sugar
2 tsp vanilla extract
