Leek, Potato and Spinach Soup

1 medium onion
1-2 cloves of garlic
1kg leeks
3 medium potatoes
A handful of spinach
Oil or butter
1L vegetable stock
Salt & Pepper
Seeds - optional
Sour cream - optional

1. Dice the onion and crush the garlic
2. Sweat the onion and garlic in the oil or butter on a low heat until soft or caramelised
(if you have enough time)
3. Wash the leeks and slice finely. Peel the potatoes and cut into small cubes
4. Add the leeks and potato and stir into the onion and garlic
5. Add a little water, cover and let the veg steam on a medium heat for 5-10 minutes,
stirring regularly so they don’t stick to the pan
6. Add enough vegetable stock to just cover the veg. Add salt and pepper and simmer
for about 30 minutes until the potato and leeks are soft
7. Wash and chop the spinach
8. Add in the spinach and mix into the soup. Cook for another 5-10 minutes
9. Blend the soup to the consistency you like and just add some water or milk if the
soup is too thick
10. Serve in a bowl. Add seeds and/or sour cream. Enjoy!
