Harry's celeriac and apple soup

1 medium onion
2 medium apples
1 medium celeriac
1lt vegetable stock
a small cup of milk
Optional: thyme and roasted hazelnuts to serve

1) Fry the onion in oil until soft and transclucent
2) Add the cubed celeriac and apple
3) Add the veg stock and simmer until the celeriac is soft. Add salt and pepper to taste.
4) Whizz the soup with a blender and stir in the milk at the end
