Finely chopped Onion
Red Pepper
Cauliflower Florets
Sundried Tomatoes (just a few for texture)
Geo Organic Singapore Noodle Paste
Organic Coconut Milk
Geo Organics - Bombay Potatoes 400g
Other veg you have spare, I used finely chopped Brussel Sprout Tops
Mushrooms (optional)

I never really weigh things out so it is always hard for me to write a recipe, but suffice to say, use what you like, if you think it will go okay in the dish then pop it in. Cooking is all about trial and error but when cooking with spices you cannot really go wrong, even adding some pineapple chunks to cool it slightly is an option. 

  • Lightly fry the onion and add the red pepper once onions have coloured a little
  • Stir in a third to half a jar of Geo Organics Singapore Noodle Paste and allow to cook out for a few minutes. 
  • Add other ingredients, including the Geo Organics - Bombay Potatoes, (for some added spice) and some chopped up Sundried Tomatoes (I added this because I had some to use up). 
  • Pour in the Organic Coconut Milk and simmer for about 30 minutes or less if you like crunchy veg. 
  • Serve on a bed of rice or on top a jacket potato is delicious too.
