Hispi (or sweetheart) Cabbage

1 hispi cabbage, finely shredded
2 knobs of butter
2 shallots, finely sliced into rings
salt & pepper
  1. Add a pinch of salt to a large pan of water and bring to the boil. Add the cabbage to the pan and cook for around 3 minutes until tender. Drain and keep to one side
  2. Place a heavy-based pan over a medium heat. Add the butter and when it starts to foam, add the shallots. Cook until soft, then stir in the cabbage
  3. Cook the cabbage and shallots for a further 5 minutes and season. Serve immediately
