Super Summery Supper

2 Courgettes
4 Cherry Tomatoes
2 Mushrooms
2 Cloves Garlic
1 or 2 Eggs
Grated Cheese
  1. Dice the courgettes and fry in a little olive oil and/or butter
  2. Add the chopped garlic, halved tomatoes and chopped mushrooms and cook on a medium heat
  3. Grate some cheese over the mixture
  4. Make a whole in the middle of the mixture and add the egg/eggs and allow to cook
  5. Season and garnish with some basil if you wish
  6. Munch on and enjoy
