Tofu Red Curry

1 packet of tofu (smoked or natural)
1 cup of chopped onions
1 tablespoon of oil
1 - 2 tablespoon of Thai red curry paste (available from our Online Shop)
2 1/2 cups coconut milk (available from our Online Shop)
3 tablespoons fish sauce
2 teaspoons light brown sugar
4 kaffir lime leaves, ripped
2 -4 fresh red chillies chopped (de-seeded if do not like it too hot)
coriander leaves chopped optional

1. Cut tofu into ½ inch cubes.
2. In a frying pan fry the onions in oil
3. Add the coconut milk, fish sauce, sugar and curry paste to the pan and stir.
4. Heat through for about 3 minutes then add the red chillies and kaffir lime leaves.
5. Cook for a further 3 minutes.
6. Add the tofu and heat through.
7. Serve with rice and poppadums.
