Easy Chilli Recipe

Ingredients: 
1 tablespoon olive oil
1 onion peeled and chopped
1 small or 1/2 large butternut or other squash, deseeded and chopped to bite size pieces
1 x 400g tin chopped tomatoes
2 teaspoons cumin seeds
1 teaspoon chilli powder
1 x 400g kidney beans, drained
100g quinoa
400g water
Method: 
  1. Heat the olive oil in a large heavy bottomed saucepan
  2. Add the onion and fry until soft
  3. Add the cumin seeds
  4. Ad the butternut squash
  5. Fry for 5-7 minutes, stirring frequently
  6. Add the tomatoes and kidney beans
  7. Add the chilli powder
  8. Stir and bring to the boil
  9. Turn down the heat to simmer
  10. Meanwhile prepare the quinoa by placing in a saucepan
  11. Cover iwth the water
  12. Bring to the boil and simmer for 15 minutes
  13. Transfer to the chilli mix
  14. Stir and serve
