Easy Apple Cake Recipe

6oz /170g margarine
4oz /125g light muscavado sugar (or soft brown sugar)
3 eggs beaten
225g / 8oz self-raising flour
1 teaspoon cinnamon or mixed spice
1 1/2 lb/ 750g apples, peeled and chopped
80ml apple juice or cider
  1. Preheat the oven 160 degrees C
  2. Cream the margarine and sugar, by mixing them together with a wooden spoon, or in a food processor
  3. Beat the eggs into the mixture
  4. Mix the cinnamon into the flour
  5. Fold the flour and cinnamon into the mixture
  6. Add the apple juice or cider
  7. Mix in the apples
  8. Pour the mixture into the prepared cake tin
  9. Place in the oven and cook for about 60-70 minutes
  10. Allow to cool in the tin for 5 minutes, and then turn out on a rack
